Nutritious DRUMSTICK

Nutritious DRUMSTICK

This humble vegetable is a powerhouse of nutrition. Gujarat Govt has decided to introduce this vegetable it is Midday Meal Scheme.

Besides building strong bones it increases haemoglobin and is a blood purifier and aids in the functioning of brain and nerves. It also is a detoxifier. Its soup is believed to help in chest congestion, coughs and sore throat.

It has Vitamins, Carbohydrates, Protein, Iron, Calcium, Potassium, Copper, Sulphur, Magnesium, and Amino acids in abundance.  It has  seven times more Vitamin C in orange, four times more Vitamin A in carrots, three times more Potassium in bananas, four times more Calcium in milk and twice more Protein in milk. Besides Vitamin A & C it has Vitamin B complex especially Choline.

The leaves are equally or in some cases more nutritious than the vegetable itself.
The leaves are excellent health tonic for the skeletal system and helps in keeping digestive problems at bay. The leaves are a good source of nutrition in pregnancy and lactation.

Re-boiling of Milk

Re-boiling of Milk

Boiling and re-boiling of milk on high temperature for an extended period can affect its nutritional content, especially the Vitamin B group and protein. Even if it is not pasteurised, boiling for less than 8 minutes at 100 deg celcius is perfectly fine.

BROWN Unpolished Rice

Why BROWN Unpolished Rice?

Unpolished Brown rice is a rich source of manganese, selenium, phosphorous, copper, magnesium and niacin(vitamin B3).

After milling and polishing the same rice loses 67% of vitamin B3, 80%of vitamin B1, 90% of vitamin B6 and 50% -60% of manganese, phosphorous and iron and all of essential fatty acids. The dietary fibre is lost too. The brown rice has a lower Glycemic Index and high fibre content.

In spite of its health enhancing properties some dieticians tell us to avoid it becoz it is not easily digestible.

Properly washed and brown rice soaked it hot water for a few hours might make it easier to cook and more easily digestible. So use it sparingly if you find it difficult to digest.

Listening to your body is the key word. But yes hand pounded rice is definitely a very healthy option.
